Open one from the United Kingdom, France, Germany, or Australia and the quantities are almost universally in grams and millilitres. These are not just different units — they represent philosophically different approaches to measuring ingredients in the kitchen, each with its own strengths, weaknesses, and practical trade-offs.

The American preference for volume-based measurements reflects a historical kitchen culture where cooks worked without precision scales, relying on standardised measuring cups and spoons that could be found in any household. The metric preference for mass-based measurements reflects the broader adoption of the metric system across most of the world and the recognition, embraced particularly strongly by professional bakers and food scientists, that mass is inherently more precise than volume for many dry ingredients.

The system is convenient for liquid ingredients. A cup of milk is a cup of milk regardless of where you buy the milk or which cow it came from. The volume is fixed and the measurement is straightforward. The system struggles, however, the moment you try to apply volume measurement to dry ingredients, where density varies significantly.

The European and Metric Approach: Grams and Millilitres

Most professional bakers and the majority of the world outside the United States measure dry ingredients by weight rather than volume. Grams and kilograms are the standard, with millilitres used for liquids (since one millilitre of water equals one gram, making the conversion between mL and g particularly easy for water-based liquids).

The advantage of measuring by weight is consistency and precision. When a recipe calls for 200 grams of flour, every cook who follows that recipe starts with exactly the same amount of flour regardless of how the flour is stored, whether it has been sifted, and how it settles in the bag. Most modern digital kitchen scales display both grams and ounces and can be zeroed (tared) between additions, allowing you to measure multiple ingredients directly into a single bowl without washing multiple cups.

The conversion-by-weight approach also reduces dish washing and simplifies the cooking workflow: instead of filling, levelling, and emptying a cup three times for flour, sugar, and oats, you set the bowl on the scale, add flour until the readout shows 200 grams, zero it, add sugar until the readout shows 100 grams, zero it again, and continue.
