Why it Matters

Volume measurement has two incompatible systems in everyday use: the metric system (millilitres, litres, cubic metres) used everywhere outside the US, and the imperial / US customary system (fluid ounces, cups, pints, quarts, gallons). Critically, US and UK gallons differ by about 20%, so a recipe from an American cookbook and one from a British one use different volumes even when both say 'gallon'. Why volume units are confusing

Volume has more conflicting standards than almost any other quantity. The metric system (mL, L, m³) is internally consistent, but the US and UK both use “gallon,” “pint,” and “fluid ounce” for different sizes. A US pint is 473 mL; a UK pint is 568 mL. A US gallon is 3.785 L; a UK gallon is 4.546 L.

The conversion method

All conversions go through litres as the base unit. Each unit has an exact litre-equivalent, so converting from any unit to any other is a single multiply-then-divide operation.

Cooking note

US cup measurements in recipes are the US customary cup (≈ 236.6 mL). Metric recipes use 250 mL cups. The difference matters for precise baking — a full 8-cup batch would differ by about 107 mL between systems.

How many litres in a US gallon vs a UK gallon?
One US gallon is exactly 3.785411784 litres. One UK (imperial) gallon is exactly 4.54609 litres. The UK gallon is about 20% larger. This difference matters in fuel economy too: US mpg and UK mpg use different gallon sizes, so a UK car rated at 40 mpg is not the same as a US car rated at 40 mpg.
